Description

Sichuan Pepper, also known as Japanese Pepper, is native to the Sichuan region of China. It is an exotic tree that yields a highly prized Asian spice.

Its thorny silhouette reaches up to 4 meters in height at maturity, adorned with delicate white flowers in the spring that give way to tasty, bright red fruits starting in late October. Both the leaves and the fruits of this tree are captivating due to their enchanting fragrance, while its berries contain a spice with unique flavors.

The husks of the pungent pepper berries offer a singular tasting experience, causing both a slight tingling and numbing sensation in the mouth, followed by a refreshing lemony note at the finish.

- Properties:

Culinary Use: It is highly valued as a condiment; note that only the dried outer husk of the berries is used.

Medicinal History: Formerly used in traditional medicine to relieve pain, it is now popular for its stimulating effects on blood circulation and its beneficial action against digestive issues such as bloating and flatulence.

Ornamental Use: Zanthoxylum piperitum is a very ornamental bushy tree that can be used for defensive hedges thanks to its thorns, which strengthen over time, and its beautiful berries.

Spice Blends: A favorite among lovers of refined spices, it is notably found in the "Five-Spice" blend along with star anise, cloves, cinnamon, and fennel.

- Harvesting the Spice:

Harvesting generally takes place from mid-October. Ensure you collect the husks and not the seeds, as the seeds are unfit for consumption and have no culinary value. To separate the husk, let the berries dry in a dry place for 5 to 10 days.
Stir by hand to separate the two parts; then, using a tilted tray, roll the seeds away—the husks will remain at the top. This rare spice can be kept in an airtight jar for 2 to 3 years without losing its flavor.

- Cultivation and Planting:

  • Plant the Sichuan pepper tree in a 3 to 4-liter pot with high-quality horticultural soil.
  • Press down gently around the root collar.
  • Water copiously at the base.
  • It is important to ensure good drainage at the bottom of the pot before planting.
  • Place the pot in a shaded area for 2 to 3 days to acclimate it.
  • Afterward, it can be moved to a well-sunned area.

- Soil Type:

Zanthoxylum piperitum grows in soil rich in organic matter, preferably with a high pH. Proper drainage of the substrate is crucial during planting.

- Exposure / Sunlight:

This plant prefers partial to full sun. Sun exposure during the day promotes healthy growth and optimal fruit production.

- Temperature / Hardiness:

It is hardy down to Zone 6 (minimum temperatures of -23°C to -18°C). It can survive cold winters, but it is best to protect it during its first 2 years while it is still young.

- Water Needs / Humidity:

Watering should be regular, especially during dry periods. It is important not to let the soil become too dry, but also to avoid excess water which can cause root rot. Mulching at the base of the plant is ideal for retaining soil moisture.

- Multiplication:

It can be propagated by cuttings by taking semi-woody stems of about 10 to 15 cm, ensuring they have several nodes. Plant them in a small pot with a mix of soil and sand, burying one node underground. Rooting is quite slow; expect a wait of several months.
